We get it. It’s Wednesday night, you’re tired, the winter blues are hitting, and the idea of getting Uber Eats is already breaking the bank. Don’t have a breakdown; try this delicious high-protein, low-cal Coconut Chicken Curry. It’s one pot, one pan, one glorious, warm meal.

Made with Raw C Straight Up Coconut Milk, this curry is full of healthy fats that will keep you feeling full, satisfied, and smug. With 40g of protein per serve (without rice), it’s a nutritious feed that tastes like a treat but fuels like a pro. You made something at home that literally ate and left no crumbs.

Ingredients

  • 400ml Raw C Straight Up Coconut Milk
  • 1kg chicken breast, skinless and diced
  • 1medium white onion, diced
  • 3cloves garlic, minced
  • 1can of diced tomatoes
  • 2cups jasmine rice
  • 1cup low-sodium chicken broth
  • 1tbsp Raw C Virgin Organic Coconut Oil
  • 2tbsps tomato paste
  • 4grams stevia
  • 4tbps curry powder
  • ½tsp salt
  • ½tsp pepper
  • 2tbsp fresh parsley, to garnish (optional)

Method

  1. Heat a large skillet or Dutch oven over medium heat. Add a splash of oil and the diced chicken, salt, and pepper. Cook for five minutes, or until lightly browned.
  2. Add the onion, garlic, and curry powder. Stir well and cook for two minutes until fragrant.
  3. Pour in the chicken broth, Raw C Straight Up Coconut Milk, diced tomatoes, tomato paste, and sugar replacement. Stir to combine.
  4. Bring the mixture to a gentle boil, then reduce the heat. Cover with a lid and leave to simmer for 15-20 minutes until the sauce thickens and the chicken is fully cooked.
  5. Serve with jasmine rice and garnish with fresh parsley, if desired.
