You'll want to hit save on this Creamy Lemon Bar recipe! 🍋🥥🍋 @eatingforfuel has created this incredible recipe below using our Organic Virgin Coconut Oil 🙌 She keeps these in the freezer over the week and pulls one out to defrost about 10 mins before eating so it’s ice cold and creamyyyyyy. Base:⁠⠀
1 cup of gluten-free oats⁠⠀
1 cup of almond flour/meal thealmondfarmer⁠⠀
A pinch of salt⁠⠀
2 tbsp of coconut sugar naturally_sweet_australia⁠⠀
4 heaped tbsp Natural Raw C coconut oil, melted ⁠⠀
⁠⠀
Filling ⁠⠀
1 cup yoghurt of choice coyo_organic⁠⠀
1/2 cup lemon juice⁠⠀
1/4 cup coconut sugar naturally_sweet_australia⁠⠀
1/2 cup of shredded coconut⁠⠀
30g of vanilla protein (optional - gives the recipe a protein boost and I also love the flavour) macr0mike⁠⠀
⁠⠀
Topping:⁠⠀
You may decide to use white chocolate, make your own icing, or better yet, use the gorawdessert coconut mousse like I did! ⁠⠀

Method:⁠⠀
For the base, simply mix all ingredients together until smooth, then pop into a lined slice tray and into in the freezer while you make the filling. ⁠⠀
Mix all filling ingredients together well until smooth, then pour over the base. Cover your slice in your topping of choice - I used coconut mousse, then either pop in the fridge to set for at least a few hours, or into the freezer. You may also choose to cover the slice in some more desiccated coconut/lemon pieces. Enjoy!⁠⠀

Ingredients⁠
For the base layer:⁠
1 cup Granola (I used plantlifefoodco cherry coconut)⁠
1 cup almond flour or almond meal⁠
2 tbsp Natural Raw C coconut oil ⁠
2 tbsp maple syrup⁠
Pinch of cinnamon⁠
Pinch of salt⁠
⁠
For the filling:⁠
2 cups frozen raspberries ⁠
1 tbsp lemon juice⁠
2 tbsp maple syrup⁠
1 tbsp chia seeds⁠
.⁠
Topping:⁠
Granola (plantlifefoodco )⁠
.⁠
Directions ⁠
1. Preheat oven to 200°C⁠
2. Combine all the base layer ingredients in a food processor and pulse 3-5 times until combined⁠
3. Press mixture into a lined pan with parchment paper (I used a 7x11 inch)⁠
4. Bake for 10 minutes⁠
5. While that bakes prepare the filling. Heat frozen fruit in a saucepan over medium heat, stirring continuously and using a fork to mash the fruit. Add in the lemon juice, maple syrup and chia seeds. Mix for another few minutes. Remove from heat and let cool for 10 minutes.⁠
3. Pour fruit filling mixture into the lines pan, sprinkle additional granola on top and gently press into fruit mixture⁠
Bake for an additional 5 minutes. Remove from oven and let cool completely before cutting⁠

Ingredients for 12 bars:⁠
▪️150g frozen cherries, defrosted at room temperature⁠
▪️30g Natural Raw C coconut oil, melted⁠
▪️2 medjool dates, pits removed⁠
▪️70g natvialiving sugar⁠
▪️20g brawnaturals vanilla protein powder⁠
▪️10g lemon juice⁠
▪️70g shredded coconut⁠
▪️30g coconut flour⁠
▪️200-300g melted dark chocolate to coat⁠

Directions:⁠
1️⃣ In a blender, blend dates, coconut oil, lemons juice, low calorie sugar and cherries until smooth⁠
2️⃣ Transfer liquid into a bowl and add the remaining ingredients (except chocolate)⁠
3️⃣ Mix batter until well incorporated and press into a lined baking tray⁠
4️⃣ Freeze for 30-60min or until firm⁠
5️⃣ Slice and dip into melted chocolate. Place bars onto a lined baking tray and freeze for 30min or until chocolate is firm

1 litre naturalrawc Coconut Milk boosted with Calcium ⁠
3/4 cup of rice⁠
1 T vanilla essence⁠
1t mixed spice⁠
1 cinnamon quill⁠
1-2 T rice malt syrup or maple syrup⁠
1 heaped T Blend 11 goodmix_superfoods ⁠
Mix together and put into you slow cooker. Cook on a low heat for four hours.⁠

▪️200g almond meal⁠
▪️80g desiccated coconut⁠
▪️80g granulated low cal sugar of choice, blended into a fine powder⁠
▪️70g Raw C coconut oil, softened⁠
▪️30g redtractorfoods coconut flour⁠
▪️15g flax meal⁠
▪️1/4 tsp salt⁠
•⁠
Peanut butter cream layer:⁠
▪️300g @mayversfood smooth PB⁠
▪️60g Raw C coconut oil, melted⁠
▪️15g natvialiving sweetener tablets, ground into a powder⁠
▪️30g brawnaturals salted caramel protein⁠
▪️1 tsp vanilla extract⁠
•⁠
Chocolate layer:⁠
▪️150g loving_earth dark chocolate, melted⁠
▪️10g Raw C coconut oil, melted⁠
•⁠
Directions:⁠
1️⃣ Make the base layer by mixing all base ingredients in a bowl until a crumble forms⁠
2️⃣ Firmly press crumble into a lined baking tin and freeze whilst making peanut butter layer⁠
3️⃣ To make peanut butter layer, mix all the PB layer ingredients in a bowl until smooth⁠
4️⃣ Spread the PB filling over the base and freeze for 30min⁠
5️⃣ Mix melted chocolate and coconut oil together until smooth and pour over PB layer. Freeze for 20min. Slice and store in fridge

Makes eight slices⁠
INGREDIENTS:⁠
▪️65g Shortbread (or any biscuit of choice⁠)⁠
▪️6 Protein Balls (@purabon choc brownie)⁠
▪️1 scoop Chocolate Protein Powder (macromike)⁠
▪️50g Dark Chocolate ⁠
▪️10g Raw C Coconut Oil⁠
⁠
For the Icing:⁠
▪️20g Dark Chocolate ⁠
▪️1tbs Nut Butter ⁠
▪️1tbs Raw C Coconut Oil⁠

METHOD:⁠
1. Crumble up protein balls into a microwave safe bowl. Add protein powder, dark chocolate and coconut oil. Microwave for 90 seconds or until chocolate has completely melted and stir until all ingredients are combined. ⁠
2. Food in crushed shortbread chunks. Put mixture into a lime tray and put in the fridge to set. ⁠
3. Make icing by melting ingredients together and pour over slice. Leave in the fridge to set. ⁠
*store in the fridge for up to a week⁠

2 cups Raw C coconut water⁠
1 cup instant rice⁠
2 teaspoons curry powder⁠
1/2 teaspoon cinnamon⁠
1/2 teaspoon chilli powder⁠
1/2 teaspoon ground turmeric⁠
1 pinch ground black pepper to taste⁠
1/4 cup cashews⁠
⁠
Combine all ingredients except cashews in a pot and bring to the boil. Reduce heat and simmer for 5 minutes. Stir cashews into rice mixture and cook for a few minutes more. Let it stand for three minutes then fluff with a fork. Enjoy!
