What’s better than an afternoon sweet treat? A no-bake chocolatey-peanut-buttery snack that’s healthy, delicious, and requires almost no washing up. 

Ironwoman, Dog Mum, and Raw C Ambassador Courtney Hancock knows better than anyone that nutritious treats don’t have to be time-consuming. She has whipped up a recipe for a healthy snack that fuels you for the day and can be prepared in just minutes. 

Introducing Courtney’s No Bake Chocolate Peanut Butter Balls: packed with all the goodness of a chocolate bar, minus the sugar crash. The secret ingredient? Raw C Organic Virgin Coconut Oil, whose subtle coconut flavour and creamy consistency boost flavours and create a lighter, fluffier texture. Delicious!

Ingredients

  • 2tbsps of Raw C Organic Virgin Coconut Oil
  • 1cup of pitted dates
  • 1tbsp raw honey
  • 1tbsp peanut butter
  • 2tbsp cacao powder
  • 1/2cup almond meal
  • 1/2cup raw cashews (soak for 4 hours)
  • 1/2cup raw almonds (soak for 4 hours)
  • 1cup filtered water (if needed)

Method

1. Soak your cashews and almonds in water for four hours (your future self will thank you).
2. Put all the ingredients in your blender until they are a chunky-cookie-dough like consistency. Add water as needed to help them blend.
3. Roll your dough into small, even-shaped balls.
4. Pop into the fridge until they are firm to touch.
