Picture this: You’re curled up, watching Home Alone, Elf, or whatever latest holiday flick Netflix has decided to grace us with, and bam—a craving hits. You start longing for a white Christmas. Sure, we love our sunny Santas and backyard cricket, but a tiny part of you can’t help but envy those Americans throwing snowballs and living their Christmas dreams.
Let’s be honest—if we can’t have snow, we can at least sip on the holiday spirit, right?
Enter: Eggnog. Hear us out. It might sound a bit out there, but this creamy, cinnamon-spiced drink is like Christmas in a cup and will transport you straight to a snowy wonderland (plus, it’ll make your house smell amazing). Made with Raw C Vanilla Bean & Sea Salt Coconut Milk, it’s the perfect way to channel your inner Hallmark character—dairy-free and vegan too.

Ingredients
- 9egg yolks (no egg whites needed)
- 4cups of Raw C Vanilla Bean & Sea Salt Coconut Milk
- ¾cup sugar
- 1tsp nutmeg
- ½tsp cinnamon
- ¼tsp ground ginger
- ¼tsp ground cloves
Method
- Whisk the egg yolks and sugar together in a medium saucepan until smooth and creamy.
- Add 2 cups of Raw C Coconut Milk, whisking until fully combined.
- Put it on low heat and keep whisking as the mixture heats up. Use a thermometer to check the temperature—aim for 82°C. Be patient; depending on your stove, this can take 10-15 minutes.
- Once it reaches 82°C, remove the pan from the heat. Slowly stir in the remaining 2 cups of Raw C Coconut Milk, mixing well.
- Add the nutmeg, cinnamon, ginger, and cloves—and whisk everything together.
- Let the mixture cool to room temperature before transferring it to a jar. Pop in the fridge for at least 2-3 hours to allow it to thicken
- Serve with a cinnamon stick and enjoy your creamy, coconutty eggnog.
