Let us tell you a scary story. It’s 8 PM. It’s dark, you’re tired, and you reach your hand into your kid’s backpack and pull out one of the most bone-chilling, terrifying things ever—a flyer.

Bake Sale Tomorrow. Dun. Dun.

Ok, well, it might not be Stephen King-level scary, but there is literally nothing worse than needing a quick dessert for a bake sale, the office event you forgot was happening, or “so and so’s” birthday. Now, as tempting as rushing out and grabbing that store-bought mud cake seems, we promise you, Jess’ White Chocolate Rocky Road will be made quicker than you can say, “No one will be able to notice the cake’s store-bought, right?”.

Now, while the pictures may seem daunting, the method, ingredients, and almost no time spent making are not. Made with white chocolate, this twist on the classic Rocky Road adds a slightly elevated touch, setting your dessert apart from the usual mountain of chocolate Rocky Road, hedgehog slice, and chocolate crackles that everyone else is sure to bring.

What’s better? This recipe uses pantry staples like nuts, cereal, and protein powder, so it can be adjusted to whatever you have lying around in your cupboard. The only thing you will definitely need to have on hand is Raw C Liquid MCT Oil.

MCT Oil is a quick energy source that is rapidly absorbed while also supporting brain function—so it’s set to impress your coworkers/friends/the entire P&F committee—and you know what, even your tired self.

Ingredients

  • 1tbsp Natural Raw C Liquid MCT Oil
  • 2tbsps pistachio
  • cups of puffed rice cereal
  • ¼cup sugar-free red gummy frogs
  • ¼cup vanilla protein powder
  • ¼cup of desiccated coconut

Method

  1. Combine all of your dry ingredients in a medium mixing bowl until mixed through.
  2. Add in your Natural Raw C Liquid MCT Oil and stir well.
  3. Pour the melted white chocolate over the mixture and mix until well combined.
  4. Pour your mixture into a lined baking tray. Flatten nicely and evenly with a spatula.
  5. Pop in the fridge for 1-2 hours to allow the slice to set.
