Vanilla Bean and Blueberry Pancakes

Recipe By @_rosenelson

It’s Sunday morning. Which means three things are undeniably true:

  • Your bed feels like pure bliss.
  • Absolutely no alarm clocks will be ringing.
  • And it’s the perfect time for pancakes.

Now, we know what you’re thinking: Pancakes? Sounds great, but they require so much effort. But wait—don’t reach for one of those bland, watery mixes full of sugar. You probably have all the ingredients for Rose’s pancake recipe right in your pantry, and everyone knows nothing beats homemade.

So why are these pancakes a game-changer? They’re made with Raw C Vanilla Bean and Sea Salt Coconut Milk and cooked in Raw C Organic Virgin Coconut Oil. This combination creates the fluffiest, tastiest pancakes that provide steady energy—no sugar spikes, just pure deliciousness.

The Raw C Vanilla Bean and Sea Salt Coconut Milk infuse each pancake with an irresistible taste, ensuring that even the first pancake will be devoured.

But a warning: making these are dangerous. You might just set yourself up for pancake-making every weekend.

  • 1/4cup of chia seed
  • 2tbsps baking powder
  • 1tbsps maple syrup
  • 1tbsps vanilla essence
  • 1tbsps Raw C Organic Virgin Coconut Oil

Method

  1. In a bowl, mix together the flour, oats, almond meal, and baking powder.
  2. In a separate bowl, combine the bananas, coconut milk, egg, maple syrup, and vanilla essence until well mixed.
  3. Gradually add the wet mixture to the dry ingredients, stirring until fully combined.
  4. Fold in the chia seeds.
  5. Heat Raw C Organic Virgin Coconut Oil in a pan over medium heat.
  6. Place a heaped spoonful of batter into the pan. When bubbles start to appear, add a few blueberries to each pancake.
