*The season of festive cheer, gifts and everyone you know inviting you to a BBQ, holiday party, or basically any gathering where bringing dessert is not just encouraged but expected. 

This silly season, don’t be the millionth person to bring a box of chocolates from the servo or a dessert that requires too much effort to serve (Pav, we’re looking at you). 

Instead, we whip up our Healthier Gingerbread recipe—no plate, fork, or even napkin required. Delicious, festive, and sure to impress, it’s made with Raw C Organic Virgin Coconut Oil in place of butter. The result? A healthier alternative that still packs all the rich, Christmas-y flavour you know and love. 

Plus, being made with Raw C Organic Virgin Coconut Oil and Raw C Straight Up Coconut Milk means it can be devoured by vegans or the lactose-free.

How fa-la-la-lovely.

Ingredients

  • 2 ½cups flour
  • ¼cup Raw C Organic Virgin Coconut Oil (melted)
  • 1 ½tsp ground ginger
  • 1tsp ground cinnamon
  • ½tsp ground nutmeg
  • ¼tsp ground cloves
  • ½tsp baking soda
  • ¼tsp salt
  • ¼coconut sugar
  • ¼cup molasses
  • 1egg
  • 1tsp vanilla extract
  • 2-3tbsps of Raw C Straight Up Coconut Milk (as needed for dough consistency)

Method

  1. Preheat the oven to 175°C. Line a baking sheet with baking paper. 
  2. In a large bowl, combine flour, ginger, cinnamon, nutmeg, cloves, baking soda, and salt. Set aside. 
  3. Combine the melted Raw C Organic Virgin Coconut Oil, coconut sugar, molasses, egg, and vanilla extract in a separate bowl until smooth. 
  4. Gradually add the wet ingredients to the dry ingredients and stir until combined. 
  5. Add Raw C Straight Up Coconut Milk, one tablespoon at a time, until the dough is soft but not sticky. 
  6. Wrap your dough in cling wrap and chill for at least thirty minutes. 
  7. On a lightly floured surface, roll out the dough to about 5mm thick. Cut into whatever shape you wish (gingerbread men, Christmas trees, or even coconuts!).
  8. Pop these onto your tray and bake for 8-10 minutes until the edges are hard but the cookies are still soft.
  9. Once these cookies have cooled, decorate!
