If a cinnamon scroll and a chocolate chip cheesecake had a workplace crush on each other, this would be their lovechild. It’s sweet, delicious, and just a little indulgent, but in the best way.

These Cinnamon Chocolate Cheesecake Bars are the answer to that kind of day. The one where you are curled up on the couch, rewatching The Holiday, browsing for some cute linen pants you probably don’t need, and craving something that feels like a hug in dessert form.

With a soft cinnamon-spiced base, a creamy cheesecake filling, and pockets of melty chocolate throughout, they are the kind of treat that makes you feel like everything will be okay, even if your to-do list says otherwise.

It’s made with Raw C Premium MCT Liquid Coconut Oil so your sweet treat now comes with a brain boost and extra energy. It’s easy to make, hard to share, and even harder to forget.

Ingredients

  • 30gof chocolate protein powder
  • 200glight cream cheese
  • 90gvanilla protein yoghurt
  • ¼cup of maple syrup
  • 1cup of almond meal
  • 2tbsp of Raw C Premium MCT Liquid Coconut Oil for the base
  • 1heaped tbsp of cocoa powder
  • 1tbsp of Raw C Premium MCT Liquid Coconut Oil for the cheesecake filling
  • 1tbsp of syrup
  • 1tbsp of natural sweetener (e.g., stevia or monkfruit)
  • 1tsp each of cinnamon, vanilla extract & salt (or measure with your heart)

Method

  1. Mix the almond meal, protein powder, cocoa powder, MCT oil, and maple syrup in a medium bowl until combined.
  2. Divide the base mixture evenly into six silicone moulds or sections of a slice tray. Place in the freezer to set.
  3. Whisk the cream cheese, protein yoghurt, MCT oil, maple syrup, sweetener, cinnamon, vanilla, and salt in a separate bowl until smooth and lump-free.
  4. Pour the filling evenly over the bases and sprinkle with extra cinnamon.
  5. Freeze for 1–2 hours or until firm.
  6. When ready to serve, pop out the bars and let them sit at room temperature for 10 minutes to soften.
