Ingredients
- 2ripe bananas (mashed)
- 2eggs
- 1/3cup Raw C MCT Premium Liquid Coconut Oil
- 1/2cup maple syrup
- 1cup plain flour
- 1/2cup oat flour
- 1/2cup chopped dark chocolate (and extra to sprinkle on top)
- 1/3cup cocoa powder
- 1/4cup brown sugar
- 1tsp vanilla
- 1/2tsp baking powder
Method
- Preheat the oven to 180°C and line a loaf tin with baking paper.
- Combine all the wet ingredients (banana, egg, MCT oil, maple syrup, and vanilla) in a medium bowl.
- Mix the dry ingredients (flour, cocoa powder, brown sugar, and baking powder) in a larger bowl.
- Gradually add the wet mixture to the dry mixture, stirring until combined.
- Pour the batter into the prepared tin and bake for 55–60 minutes, or until a skewer inserted into the centre comes out clean.
- Allow the loaf to cool in the tin for 10 minutes before slicing.
