Yes, you heard us right. Brownie batter and banana bread. Cue the drool.

Now, you’re probably thinking—yum! But does double the dessert mean double the sugar crash and double the icky feeling afterwards? Not with Raw C involved.

Ingredients

  • 2ripe bananas (mashed)
  • 2eggs
  • 1/3cup Raw C MCT Premium Liquid Coconut Oil
  • 1/2cup maple syrup
  • 1cup plain flour
  • 1/2cup oat flour
  • 1/2cup chopped dark chocolate (and extra to sprinkle on top)
  • 1/3cup cocoa powder
  • 1/4cup brown sugar
  • 1tsp vanilla
  • 1/2tsp baking powder

Method

  1. Preheat the oven to 180°C and line a loaf tin with baking paper.
  2. Combine all the wet ingredients (banana, egg, MCT oil, maple syrup, and vanilla) in a medium bowl.
  3. Mix the dry ingredients (flour, cocoa powder, brown sugar, and baking powder) in a larger bowl.
  4. Gradually add the wet mixture to the dry mixture, stirring until combined.
  5. Pour the batter into the prepared tin and bake for 55–60 minutes, or until a skewer inserted into the centre comes out clean.
  6. Allow the loaf to cool in the tin for 10 minutes before slicing.
